Place salmon, parsley, dill, eggs, ground sesame, and ground flax into food processor. Mix completely.
With processor running, pour potato flour through the opening.
When the dough forms a ball it is ready to take out.
Place dough on a potato-floured counter or board. Roll out to about 1/2 inch thickness. Cut into small squares. If you want, you can use a cookie cutter.
Bake on cookie sheets sprayed with non-stick, or line sheets with parchment paper.
Bake in a 375° oven for 20 min.
Turn and rotate the cookie sheets and bake about 10 more minutes.
