Preheat oven to 250°
Line a baking sheet with parchment paper.
To stabilize the potato while cutting, cut a thin slice off the potato lengthwise and then turn the potato onto this flatter surface.
Cut the potato lengthwise into slices 1/4 - 1/3 inch thick.
Place slices onto dehydrator trays and dry at 200°F for about 3 1/2 hours.
Store in airtight container for up to 3 weeks.
